- 2 eggs.
- Salt and pepper to taste.
- 2 tablespoons oil, divided.
- 1 tablespoon chopped onion.
- Shredded mozzarella cheese.
- ¼ cup Taqueritos Chile Toreado.

- Step 1. Beat the eggs and season with salt and pepper to taste.
- Step 2. Heat 1 tablespoon of oil in a non-stick skillet and sauté the onion over medium heat until translucent, then add to the eggs.
- Step 3. In the same skillet, add the remaining tablespoon of oil and raise the heat to medium-high. Pour in the eggs and cook until set.
- Step 4. Flip with the help of a spatula or lid. Add the cheese and Taqueritos, then fold the omelette.
- Step 5. Reduce the heat to medium-low and cook until the cheese is melted.
